It's important to choose the right fat or high-quality oil for the job, especially when cooking high-quality grass fed meats, so that you can avoid burning the oil (and, as a result, consuming unhealthy free radicals).Here's how we like to use our favorite nourishing fats and oils in the kitchen:#Coconut Oil has a complex and nutty flavor and is a great finishing oil to add to dishes with an Asian seasoning base or with a sweet/savory seasoning profile. It has a 450F smoke point.#Avocado Oil is a low-PUFA vegetable oil that is our go-to for stir fry and deep fry recipes with meat due to its neutral flavor and high smoking point of 520F.#EVOO: We love its flavor for finishing meats.🍈 Use this to add a boost in flavor and complementary bitter and astringent notes to thin slices of flat iron or tri tip – or blend with shredded cooked chicken meat, herbs and lemon for a summery salad. It has a 350-410F smoke point, depending on how refined the oil is.#Ghee, or clarified butter, has a mild flavor that is naturally complementary to meats (as it’s another animal fat). Use this for searing meats without much extramuscular fat to render while cooking, like chicken, beef heart, and other lean muscles.
