Our Belcampo Bolognese recipe uses a beef to pork ratio of 2:1. This is our favorite blend for the sauce because it creates a creamier and more flavorful sauce. Pork has more sugar and finer fibers in the muscles than beef and adds the creaminess to the sauce.
