In a large pot, combine spices, salt, sugar and water. Bring to a simmer over medium heat until sugar and salt have dissolved.
Remove from heat and allow to cool completely.
Add the beef to the cooled liquid and brine for 5-7 days.
Flip the brisket and stir the brine once daily to ensure a consistant brine.
Bring a large Pot to a simmer with your favorite beer or water. Add your brisket and simmer 45-50 Minutes per pound.
Let rest 10 minutes before slicing.
