Chicken Tortilla Soup
A delicious and savory stew that comes together in no time!
Ingredients
½ minced red onion
Package Belcampo Poultry Bone Broth
1 quart tomato puree
Salt and pepper
2 tsp chili powder
Pinch of cumin
Splash of sherry vinegar
2 cups cooked chicken
6 corn tortillas
Avocado, Cotija Cheese, Fresh minced onion, sliced limes, cilantro for garnish
Directions
Saute minced onion in olive oil for about 5 minutes, until soft
Combine all ingredients and reduce to simmer
Simmer for approximately 20 minutes, adjust seasoning as desired
Meanwhile, fry 6 sliced tortillas in suet or ghee
Ladle into large bowls and garnish with fried tortilla strips, cheese, citrus, and any other desired toppings
