When we need to power our way through a Winter day on the farm, there's no better fuel than this Hearty Winter Salad of marinated kale topped with leftover turkey, pumpkin seeds, and soft boiled eggs.

INGREDIENTS

  • About 1 1/2 cups Cooked Turkey Breast, sliced

  • 3 Soft Boiled Eggs

  • 2 bunches Dino Kale

  • 1 Carrot, shaved

  • 3 tbs Pepita Pumpkin Seeds, toasted

DRESSING

  • 1/3 cup Buttermilk

  • 1/3 cup Olive oil

  • 3 tbs Lemon juice OR juice of 2 lemons

  • 1 cup Nutritional yeast**

  • Kosher salt

  • Freshly ground black pepper

STEP-BY-STEP

  • 1. Whisk all dressing ingredients until creamy. Salt to taste.

  • 2. Strip kale from stalks, roughly chop.

  • 3. Buttermilk softens kale. Massage kale with dressing, allow to sit for approx. 15 minutes.

  • 4. Top with turkey, sliced eggs, shaved carrots, toasted pumpkin seeds, and freshly cracked pepper.
