Job Purpose
The butchers at the Belcampo Butchery perform daily duties and undertake various responsibilities consistent with Belcampo values. It is the responsibility of the butchers / meat cutters to fabricate product consistent with orders dictated by the Fabrication and Processing Management. Additionally, the butchers will work above and beyond the minimum food safety guidelines. Our butchers will work well as a team, supporting and contributing to the goals of the overall team.

 

Job Duties and Responsibilities
1. 70% Cut all species, beef, pork, lamb, poultry and fowl according to Belcampo specs, as well as any custom cutting work as described by the Fabrication Manager, Inventory Manager and Assistant Processing Manager. Show strong anatomical knowledge of all species.  Butchers will perform these tasks in compliance with USDA FSIS regulation as well as our own HACCP requirements.
2. 10%  Will maintain company and personal tools and equipment in good working order: keep knives sharp and use all equipment safely and within operating guidelines.

Job Purpose
Under minimal supervision, the Sous Chef bears secondary—and, in the absence of the Head Chef, primary—responsibility for the quality of all fresh prepared foods at Belcampo Meat Company. The Sous Chef is responsible for planning and directing food preparation in the kitchen, which involves a large degree of supervising other kitchen staff, as well as keeping an eye out for problems that arise in the kitchen. The Sous Chef at times, will be expected to discipline and coach underperforming staff members, as well as provide encouragement and for staff members that go above and beyond their duties.

 

Job Duties and Responsibilities
1. 20% Maintain and assure highest level of quality for all fresh prepared food products
2. 12% Oversee and accurately execute all menu items during all services
3. 15% Train and coach kitchen staff and take appropriate action to ensure that all staff are performing their duties to expectations.
4. 15% Manage purchasing and inventory in absence of Head Chef
 5. 10% Maintain clean, organized and properly functioning kitchen, including equipment upkeep
6. 5% Work with Head Chef to propose new dishes and specials when necessary
7. 5% Coordinate with Head Butcher to ensure maximum product usage and profitability
8. 5% Ensure compliance with local health department and other regulations
9. 5% Assist in general tasks as specified by Head Chef & General Manager

Minimum Qualifications
–   3+ years of culinary experience

–   High school degree/GED equivalent is preferred

–   Manager Food Safety Certification is preferred however serve safe is required

–   Spanish proficiency preferred

 

Physical Requirements
–   This positions requires the ability to work standing for about 8+ hours a day, 5 – 6 days a week

–   Schedule and hours varies from Monday – Sunday

–   Lift approximately 50 pounds
