Preheat oven to 350 °F
In a food processor, blend :
– 1 whole head garlic, peeled
– Peel of 1/2 lemon, cut off lemon
– leaves of one half bunch thyme
– 1 teaspoon salt
– 1/2 teaspoon pepper
– 1/4 c Olive Oil
Rub the herb and garlic paste on all sides of the chicken.
Line a sheet tray with parchment paper, Set the chicken, skin side down on the papered tray and roast on sheet tray at 350°F degrees for approx. 40-50 minutes, turning skin-side up halfway through or cook skin-side up on a medium grill for 30 minutes, flip to place the skin on the grill and cook an additional 20 minutes.
Serve with minced parsley and lemon slices.
