Herb and Garlic Roast Chicken

Ingredients

1 Whole chicken – Cut into 8 parts

Herb and Garlic paste:
2 Whole heads garlic, peeled
Peel of one lemon, cut off lemon
Leaves of one whole bunch thyme
2 Teaspoon salt
1 Teaspoon pepper
1/2 c Olive Oil

Tips

Serve with minced parsley and lemon slices.

Preheat oven to 350

In a food processor, blend all Herb and Garlic paste ingredients. Rub the Herb and Garlic paste on all sides of the chicken.

Line a sheet tray with parchment paper. Set the chicken, skin side down on the papered tray and roast on sheet tray at 350 degrees for 50 minutes, turning skin-side up halfway through or cook skin-side up on a medium grill for 30 minutes, flip to place the skin on the grill and cook an additional 20 minutes.
