Mix Dry Ingredients:
½ c Almond or Hazelnut flour
¾ c Lakanto Monkfruit & Erythritol Sweetener
¾ c OMG Organic Cacao
½ t Baking Soda
Melt: 10T organic butter or ghee
½ keto chocolate chips (optional)
Mix the wet and the dry and blend in:
3 whole eggs
Pinch of salt
2T vanilla extract
Spread into a small buttered loaf pan or a cake pan 8″ diameter – the batter should be about 1.5” deep.
Bake at 350 °F for 10-15 minutes until puffy and just barely set. Keep in the fridge for easy slice-ability!
