Preheat your oven to 375 F

Prepare a baking sheet with parchment paper.

Combine all ingredients in a mixing bowl. Mix thoroughly by hand. Don’t over-work the mixture.

Form the meat into balls that are slightly larger than a golf ball. Align them evenly on your sheet tray.

Transfer to the oven and cook for 15 minutes, until golden brown.

Remove from oven and allow to cool.

Enjoy as a snack, in a soup, or serve in your favorite sauce (we love a fresh chimichurri!)

This recipe also works great with ground lamb!

  • 1 lb Ground Belcampo Beef
  • 1 lb Ground Pork
  • 2 Belcampo eggs
  • ¼ cup Crème Fraiche
  • ½ cup Grated Parmesan Cheese
  • 1 TBS Minced Garlic
  • ¼ cup Minced Onion
  • 2 TBS Fennel seed, toasted, ground
  • 2 TBS fresh thyme, minced
  • 1 TBS Salt
  • ½ TBS Black Pepper
