Meatloaf Muffins

Ingredients

  • 2 lb Ground Belcampo beef
  • 2 ea whole egg
  • 3 ea minced garlic cloves
  • 1 ea large shallot, minced
  • ¼ C minced chives
  • ½ C almond flour
  • 2 tbsp liquid aminos
  • 2 tsp chili powder
  • 1 tsp fennel powder
  • 2 tbsp crème fraiche
  • 1 tsp kosher salt
  • ½ tsp black pepper
  1. 1. Preheat oven to 375F
  2. 2. Line a cupcake baking sheet with cupcake paper.
  3. 3. To prepare the meatloaf mix, combine all ingredients. Mix well by hand.
  4. 4. Once the ingredients are fully combined, begin scooping into the cupcake tray.
  5. 5. Each portion should mound above the edges. These cupcakes won’t rise like the rest!
  6. 6. Transfer to the oven and bake for 15 minutes, or until the tops begin to brown.
  7. 7. Remove from the oven and allow to cool before enjoying.
