Blend rub ingredients and rub on all sides pork

Let rest 30 mins – 3 hours

Grill on high heat for about 3 minutes each side, also sear the fat cap by holding the chop on the heat with the fat facing the grill

Rub:
1/4 cup ground cumin
2 tablespoons mild chili powder
1 teaspoon ground coriander
1 tablespoon kosher salt
