Belcampo Chili con Carne

STEP-BY-STEP

1

Brown and salt the Ground Beef then remove from the pan. Hold to the side until after the blending.

2

In the rendered fat from the browning process sauté the onions and garlic to your desired doneness. Note: If there is not enough fat from the browned ground beef a tablespoon of tallow or lard works great! (or oil)

3

To a blender add in the cooked onions, cooked garlic, tomato and blend until smooth.

4

Pour the contents of the blender into a pot and add the browned ground beef, spices and the desired amount of bone broth, bring to a boil then turn down to a low simmer for 45 minutes.

5

Keep an eye on the thickness at this point during the long simmer and adjust with bone broth if needed.

6

Add in the beans and simmer for another 15 minutes.

7

Taste and adjust salt and chili heat if necessary. You can always add in but you can’t take it out!
