Skirt Steak Tacos

Serve with warmed tortillas and your favorite fixings!

STEP-BY-STEP

Combine all ingredients, except skirt steak, in a mixing bowl. Allow everything to dissolve.

Add skirt steak to the marinade and allow to rest for at least 12 hours before cooking.

Preheat grill to 475-550˚F

Remove beef from marinade and transfer to a tray, lined with a resting rack. Allow excess marinade to drip off.

Place the meat on the grill and close the lid. Cook for 4 minutes, or until it has browned.

Flip the beef and cook for 4 more minutes on the other side.

Cook the beef to desired doneness. We recommend medium-rare, 125˚F

Remove from pan and rest for 5 minutes before slicing

INGREDIENTS

  • 3 lb. Skirt Steak
  • ½ C Sliced Onion
  • 2 peels Orange Skin
  • 2 peels Lime Skin
  • 2 peels Lemon Skin
  • ¼ C Orange Juice
  • 2 tbsp Lemon Juice
  • 2 tbsp Lime Juice
  • 1 tbsp Fresh Oregano (or 1 tsp dry)
  • 1 tsp Paprika
  • 1 tsp Ground Cumin
  • 1 tsp Cayenne
  • ¼ tsp Black Pepper
  • 1 tsp Kosher Salt
