Chili is the perfect Winter dish to use up all that leftover turkey, especially in this simple recipe alongside Belcampo Hot Italian Sausage. Yum!

Ingredients

1 lb Belcampo Hot Italian Sausage
4 cups leftover dark meat turkey
2 red onions, chopped
1/2 cup chili powder
1 quart tomato sauce
2 quarts water
3 bay leaves
3-4 tbs sherry (optional)
1-2 tbs cider vinegar

Directions

Sear sausage until nice and brown. The sausages will release fat into the pan. Add the turkey and one chopped red onion. Brown for 10 minutes. Remove meat from pan, leaving the fat.
Brown one chopped red onion in remaining fat. Add red chili powder. Cook down with browned pieces and onion until bloomed.
Deglaze the pan. Add tomato sauce, 1 quart water, bay leaves, all the meats and juices back into the pot. Cover and simmer for 1 hour
Season to taste with sherry, apple cider vinegar, and/or salt. Simmer for 2-3 hours, adding water as needed to maintain consistency and stirring occasionally.
