Organic Leg of Lamb

INGREDIENTS

  • 1 Belcampo leg of lamb, bone-in

  • 2 tbsp olive oil

  • Kosher salt

  • Freshly ground black pepper

STEP-BY-STEP

  • 1. Coat the leg of lamb with olive oil.

  • 2. Season all sides of the lamb with salt and pepper.

  • 3. Preheat the oven to 325˚F.

  • 4. Transfer the lamb to a roasting rack and place in the oven.

  • 5. Roast until you reach your desired temperature.

  • 6. Remove from the oven and allow to rest for at least 15 minutes before carving.
